This is Turkish scrambled eggs with pepper and tomato. The green peppers we use are difficult to find in the US. They are long and really spicy. I love this recipe, it's just enough for 2 people. People add different stuff to this recipe, but the right peppers make the taste!

Recipe Ingredients for Menemen

5 eggs
1 1/2 tbsp corn oil
2 green peppers
1 tomato

Recipe Directions for Menemen

  1. Cook finely chopped green pepper in oil until peppers turn light green.

  2. Add tomato and cook until soft.

  3. Add whole eggs.

  4. Stir until scrambled and cooked through.
