Mendy's Homemade Spicy Salsa (for canning)

Recipe Ingredients for Mendy Ross

7 quarts Tomatoes, boiled and peeled
1 1/2 cups jalapeno peppers, chopped
1 large onion, chopped
1 1/2 cups cilantro, chopped
4 tablespoons salt
5 1/2 cups lemon juice
1/2 cup lime juice
1 cup garlic, chopped

Recipe Directions for Mendy Ross

  1. Boil 7 quarts of tomatoes. Drain hot water add cold water then peel skin off.

  2. Chop in food processor: about 12 large jalapeno peppers, 1 large onion, 3 bundles or 1.5 cups of fresh cilantro and 1 cup of fresh garlic.

  3. Blend tomatoes with chopped ingredients.

  4. Add 5.5 cups lemon juice, .5 cup lime juice and 4 tablespoons salt.

  5. Blend together.

  6. Now it's ready to eat and be canned by hot water bath.
