Great for those chilly autumn evenings! You can use fresh or canned pumpkin puree.

Recipe Ingredients for Mel's Pumpkin Chili

1 tbsp. olive oil
1 onion, chopped
1 green bell pepper, chopped
2 tsp. cumin
2 tsp. paprika
2 lb. lean ground beef
2 c. pumpkin
4 tomatoes, chopped
2 c. chicken broth
275 g Mild Green Chile Enchilada Sauce
2 c. black beans

Recipe Directions for Mel's Pumpkin Chili

  1. Saute onion, pepper, and spices in oil for approximately 5 minutes. Add meat, and brown.

  2. Drain fat off meat and transfer to stock pot or CrockPot. Add all other ingredients. Stir, then cover.

  3. For stovetop preparation, let simmer for at least 30 minutes. For CrockPot, leave on low until ready to eat.
