Recipe Ingredients for Mel's Peanut Butter Banana Cookies

2/3 cup peanut butter
1 1/3 cups flaxseed
1/4 cup white sugar
110 g brown sugar (1/2 cup packed)
2 egg whites
1 teaspoon vanilla extract
1 cup banana, mashed
1/2 cup all-purpose flour
1/2 cup bob's pastry flour
3/4 teaspoon baking powder
1/4 teaspoon salt

Recipe Directions for Mel's Peanut Butter Banana Cookies

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. In a large bowl, cream together the peanut butter, flaxseed, white sugar, and brown sugar until well blended.

  3. Beat in the egg whites, vanilla, and banana one at a time.

  4. Combine the flour, baking powder, and salt; stir into creamed mixture.

  5. Roll tablespoonfuls of dough into balls. Place cookies 2 inches apart onto ungreased cookie sheets. Press each ball once with fork tines.

  6. Bake for 8 to 10 minutes in the preheated oven, or until edges are lightly browned.
