These are delicious and pretty healthy banana muffins. Next time I'll reduce the amount of sugar.

Recipe Ingredients for MellyBrelly's Banana Muffins (half-size)

2 tablespoon butter
1 cup brown sugar, lightly packed
1 egg
3 bananas
1 teaspoons baking soda
2 tablespoons water (hot)
1 1/2 cup flour
1/2 teaspoon salt

Recipe Directions for MellyBrelly's Banana Muffins (half-size)

  1. Preheat oven to 375F

  2. In a big bowl, add butter, brown sugar, egg, and bananas and blend well.

  3. In a separate cup mix baking soda and hot water and then add to the banana mixture.

  4. Add flour and salt. Mix lightly, till blended, don't over mix.

  5. If desired, gently mix in 1/3 cup chocolate chips (optional) and/or 1/3 cup chopped walnuts (optional). This recipe left those out.

  6. Pour into muffin tins.

  7. Bake at 375 for 20 minutes. Makes 12 muffins.
