Recipe Ingredients for Melissa's Waffles

3 large eggs, separated
1 1/2 cups skim milk
3 tablespoons Smart Balance oil
1/4 teaspoon vanilla extract
1 1/2 tablespoons sugar
1 cup flour
1/2 cup wheat flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Recipe Directions for Melissa's Waffles

Heat waffle iron. Beat the egg whites to soft peaks. Whisk together egg yolks, milk, oil, vanilla and sugar. Sift flour, baking powder, and salt, then gently incorporate into batter. Do not over mix. Gently fold in egg whites. Pour into waffle iron in batches. Serve right away or they get soggy.
