Vegetarian take on an old classic.

Recipe Ingredients for Melissa's Vegetarian 'Beef' and Barley Vegetable Soup

12 oz boca ground burger
2 medium potatoes, diced
16 oz frozen mixed vegetables
1/3 c dried barley
1 large onion, diced
12 oz tomato paste
29 oz tomato sauce
16 oz diced tomatoes
2 tbsp sugar
1 tbsp oregano
1 tsp marjoram
1 tsp crushed red peppers
1 quart water

Recipe Directions for Melissa's Vegetarian 'Beef' and Barley Vegetable Soup

  1. In a large stock pot, saute onions in small amount of water until soft.

  2. Add remaining ingredients.

  3. Bring to a slow boil, then lower heat to low. Let simmer about 1 to 1 1/2 hours or until barley is soft.
