With credits to the incomparable Paula Deen, this taco soup is vegetarian and focuses on fresh, lower fat ingredients.

Recipe Ingredients for Melissa's Taco Soup

1 lb dry pinto beans
1/2 lb dry kidney beans
1 gal Water
12 oz dark beer
4 ears corn, cut off the cob
2 cups diced onions
8 oz canned green chiles
29 oz diced tomatoes
20 oz Rotel tomatoes
1 can tomato paste
1 1/4 ounce taco seasoning mix
1 ounce ranch salad dressing mix
2 tsp. cayenne pepper
1 oz corn chips
1 oz reduced fat cheddar cheese

Recipe Directions for Melissa's Taco Soup

  1. Soak the beans overnight in enough water to cover. Add beer and a little more water. Simmer til soft. Add everything else (if desired, add 2 lb browned ground meat or veggie crumbles) and simmer for at least an hour.

  2. To serve, place a few corn chips in each bowl and ladle soup over them. Top with cheese.
