Recipe Ingredients for Melissa's Macaroni and Cheese

8 oz. elbow macaroni
2 tbsp. olive oil
1/4 cup flour
2 cups skim milk
1 tsp. Kosher salt
1/8 tsp. white pepper
8 oz. 2% cheddar cheese
2 egg whites

Recipe Directions for Melissa's Macaroni and Cheese

Boil the macaroni in water. Make a light roux of the oil and flour. Whisk in the milk til thick and bubbly. Incorporate the spices and cheese. Whisk the egg whites just til they foam. Take about 1/2 cup of the cheese sauce and work into the egg whites, then incorporate the whole egg mixture back into the pan of cheese sauce. Fold in the pasta. Either serve as is, or put in a casserole dish, top with cheese and bake 350 for 20 min or til the top looks good enough to eat.
