No mayo in this potato salad, but still delicious. The secret is adding the oil, vinegar, and onions to the cooked potatoes while they are still hot.

Recipe Ingredients for Meli's Potato Salad

2 potatoes
1/8 cup olive oil
1/8 cup vinegar
1/4 tsp salt
1 tsp mustard
3 green onions, chopped
5 radishes, sliced

Recipe Directions for Meli's Potato Salad

  1. Wash and cut potatoes into small cubes. No need to peel them. Cover with salted water and boil until tender, about 20 minutes.

  2. Combine oil, salad vinegar, salt, mustard, and green onions and pour over hot, drained potatoes.

  3. Refrigerate until cold before adding sliced radishes.
