An italian dish of layered griddled aubergine with a rich tomato sauce and a little cheese. Great for serving a large number of people. You can leave this dish for about 5 days in the frige and during this time it will just get better and better.

Recipe Ingredients for Melazane Alla Parmegiano

500 g aubergines, about 4large firm
10 g fresh basil
1 tsp olive oil
150 g cheese, freshly grated
1 small onion, peeled and finely choppe
70 g breadcrumbs
4 cloves of garlic, finely chopped
150 g mozzarella
1 tsp dried oregano
800 g plum tomatoes

Recipe Directions for Melazane Alla Parmegiano

  1. Firstly, cut the aubergines, after removing the stalks and ends, into inch thick rounds. Then grill the aubergines on the hot gridle pan until they have blistered brown marks on the underneath then flip over and repeat, make sure the aubergine is soft. Whilst the aubergine is cooking, or after if you are not up to multitasking, fry the oil in a saucepan with the onion and garlic until they begin to get a bit of colour, add the tomatoes and allow to simmer gently for 15 minutes. When the tomatoes has reduced add the basil and season to taste, you can now liquidise the sauce or if you want you can leave it chunky.

  2. Preheat the oven to 160c. It is now time to assemble the dish in the earthenware dish. You start with a layer of the sauce, followed by a layer of the aubergine and then a handful of parmesan, then repeat this again. Finish with a layer of aubergine and the parmesan then finish off with slices of the parmesan and breadcrumbs. Cook the dish in the oven for between 1 and 2 hours when the topping is golden brown, if it is browning to quickly turn the heat down.
