Recipe Ingredients for Melanzano a la parmiggiana

1 eggplant
2 tomatoes, big
4 tbs olive oil
2 tbs bread crumbs
50 g mozarella
75 g parmesan
1 salt, pepper, fresh basil, garlic to taste
2 eggs, beaten
235 g yoghurt, plain

Recipe Directions for Melanzano a la parmiggiana

  1. Slice and fry the eggplant.

  2. Put it in a pan, cover it with the mozzarella and sliced tomatoes, then with the beaten eggs with the yoghurt. Sprinkle the parmesan all over it. Serve it hot.
