Baked eggplant with tomato sauce and mozzarella

Recipe Ingredients for Melanzane Parmigiana

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
3 tbsp Extra Virgin Olive Oil
104 grams Mozzarella, Whole Milk Cheese
4 serving Tomatoes, Crushed, Canned
1 small Onions
2 cloves, raw Garlic
1 cup, grated Carrots

Recipe Directions for Melanzane Parmigiana

  1. Make tomato sauce with sauteed onions and garlic, add finely chopped carrot. Add tomatoes and 2/3 can of water. Simmer for 30 minutes. Then blend.

  2. Fry eggplant slices until golden and charred on outside.

  3. Layer in baking dish sauce, eggplant, mozzarella cheese and fresh basil leaves. Bake in preheated oven for 40 minutes until bubbly and aromatic.
