Recipe Ingredients for Mejadarra

1 pound Lentils
2 medium Onions
3 tablespoons Olive Oil
8 ounces Rice
1 cup Water

Recipe Directions for Mejadarra

  1. Cover lentils with water and simmer until tender about 30 minutes. Add more water if necessary.

  2. Chop one onion and fry it in half the oil until soft and golden.

  3. Add to cooked lentils.

  4. Season to taste with salt and pepper.

  5. Add rice and another cup of water.

  6. Cover and simmer gently for 20 minutes.

  7. Slice the other onion and fry it in the rest of the olive oil until dark brown.

  8. Heap rice and lentils onto a plate and garnish with carmelized onions.
