Pumpkin Pancakes with a touch of nutmeg

Recipe Ingredients for Meg's Pumpkin Pancakes

1 egg
1/2 cup 1% milk
5 tbsp whole wheat flour
4 tbsp oatmeal
3 tbsp flour
3/4 tbsp baking powder
1/2 tsp salt
3/4 cup pumpkin
1/4 tsp nutmeg

Recipe Directions for Meg's Pumpkin Pancakes

  1. Beat egg, mild and pumpkin together and set aside

  2. Mix all dry ingredients together

  3. Add egg mixture to dry ingredients and mix until just combined. Set aside to rest while you heat up the pan

  4. Cook on skillet or in frying pan about 3-4 minutes on each side.
