Good lowfat base recipe utilizing all white chicken meat. Easy to add additional favored vegetables and spices.

Recipe Ingredients for Meg's Basic Homemade Chicken Noodle Soup

6 oz dry wide egg noodles
8 c chicken broth, low sodium, low fat
1 med potato, pared and cubed
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery, chopped
3 chicken breast, skinless, boneless
1/2 tsp sea salt
1/2 tsp black pepper
1 tbl basil
1 tbl oregano
1/4 tsp garlic powder

Recipe Directions for Meg's Basic Homemade Chicken Noodle Soup

  1. Combine all ingredients except the egg noodles in large pot

  2. Bring to a slow boil for 20-25 minutes or until carrots have softened up

  3. Add noodles and cook for another 5-6 minutes

  4. Best second day (noodles will swell overnight)
