Recipe Ingredients for Meghan's Thai Dish

1 cup of coconut milk
1 cup of water
2 bouillon cubes
2 cups zucchini, sliced
1 cup mushrooms
2 cups bean sprouts
3 tablespoons red curry paste
1 tablespoon yellow curry paste (optional)
5 cloves of garlic
1 tablespoon of olive oil

Recipe Directions for Meghan's Thai Dish

  1. Saute garlic with olive (or vegetable) oil

  2. Add red curry paste

  3. Saute until aroma

  4. Slowly add in coconut milk

  5. Add water and bouillon cubes (mixed)

  6. Allow to heat together for approximately 1 min

  7. Add beansprouts, water chestnuts, mushrooms

  8. Simmer for 1 minute

  9. Slowly bring up to boil

  10. Add zucchini

  11. Add yellow paste (if desired)

  12. Cover and boil for 5 minutes, stirring occasionally

  13. Lift lid and lower heat (sauce will thicken as stands)

  14. Put over noodles, rice, or just plain! Tasty.
