Makes 24 servings



50/50 whole wheat and bread flour. You don't need a bread machine for this, just a stand mixer to do your kneading for you.

Recipe Ingredients for Meghan's Homemade Wheat Bread

1 1/2 c warm water
2 1/2 t yeast
2 T honey
2 T molasses
3 T skim milk
2 t salt
3 T crisco
2 c 100% whole wheat flour
2 c bread flour
12 g vital wheat gluten

Recipe Directions for Meghan's Homemade Wheat Bread

  1. Put water, yeast, molasses, and honey into bowl of stand mixer and let sit for 10 minutes, until yeast begins to foam.

  2. Add remaining ingredients and mix with dough hook on Speed 1 until just incorporated, then Speed 2 until the dough forms a ball on the hook, usually less than 5 minutes. (It should form a ball that is sticky, but doesn't stick to your hands. I find slightly mounding over each cup of flour, rather than measuring it level, gives the right consistency.)

  3. Preheat oven on 200 degrees for one minute, then TURN OVEN OFF.

  4. Place dough in well oiled bowl, cover with towel and place in warm and let rise until doubled, about an hour.

  5. Punch dough down, remove from bowl and shape into a log. Place in well-greased loaf pan and return to oven covered with towel to rise again, until crested at least 1" out of the loaf pan. (Again, about an hour.)

  6. Remove from oven and preheat oven to 375.

  7. Bake 30-35 minutes in the lower third of the oven, or until the bread sounds hollow when tapped.
