Lentils, rice, and onions in olive oil.

Recipe Ingredients for Megadarra

192 g. brown lentils
1 c. jasmine rice
2 large onions
1/3 c. olive oil
1 tsp. salt

Recipe Directions for Megadarra

  1. Rinse lentils, cook in 4 c. water for 25 minutes, drain.

  2. Meanwhile, prepare rice. Heat 2 tbsp. oil and 1 tsp. salt in saucepan. Saute rice until mildly translucent (about a minute). Add 1 1/4 c. boiling water. Reduce heat to low and cook covered for 25 minutes.

  3. Also meanwhile: fry the onions and rest of the oil in a large frying pan, stirring often, until they turn brown and start to get crispy.

  4. Add the drained lentils and rice to the pan with the onions, and fry until the lentils and rice start to brown a bit. Serve with a generous dollop of plain yogurt.
