Delicious vegetarian dish that will satisfy anyone! Easy to make medely of veggies in a yummy pie crust with cheese!

Recipe Ingredients for Mediterranian Veggie Pie

1 pillsbury pie crust
2 cups sliced raw mushrooms
1 diced large tomato
1 diced red onion
10 oz cooked chopped spinach
1 cup pesto sauce
1 1/2 cups mozzarella cheese
1/2 cup parmesian cheese
1/3 cup feta cheese

Recipe Directions for Mediterranian Veggie Pie

  1. Chop and cook spinach with garlic/spices as you like and dice/slice veggies.

  2. Lay out pie crust on pie dish and place in oven at 400 degrees for about 5 minutes, just to give the crust a head start to cook fully.

  3. Once crust is semi-cooked, pour pesto sauce on pie crust and spread along the bottom.

  4. Layer you're veggies however you like. I like to do pesto, onions, tomato, mushrooms, spinach while adding the mozzarella cheese along each layer (remeber to strain the spinach after cooking so the dish isn't too soggy).

  5. Once all the veggies are in the pie, top it off with parmesian cheese and sprinkled feta. Add herbs/spices as you like on top. Common favorites are oregano and basil.

  6. Place pie in the oven at 400 degrees for about 20/30 minutes or until the cheese is melted and the top has a golden color to it.
