Recipe Ingredients for Mediterranian Lentil Soup

2 1/2 c lentils, cooked with liquid
2 carrots, sliced
1 celery stalk, sliced
6 scallions, chopped
1 t coriander
2 t cumin
1/2 t thyme
1/2 t black pepper

Recipe Directions for Mediterranian Lentil Soup

  1. add veggies and spices, herbs to lentils

  2. Simmer till veggies tender (20-30 mintues)

  3. add salt or soy sauce to taste 10 minutes before end

  4. Add scallions at end of cooking time

  5. Remove from heat and add kemon juice to taste
