Recipe Ingredients for Mediterranean Vegetables

1/2 tbsp light olive oil
1 medium onion, sliced
2 garlic cloves, crushed
1 medium zucchini, cut into small strips
1 cup cherry tomatoes, halved
1 tbsp chopped fresh rosemary
1 cracked black pepper
1 pinch salt

Recipe Directions for Mediterranean Vegetables

  1. Heat the oil in a small pan

  2. Add the onion and sweat until soft

  3. Add the garlic and fry for 1 minute

  4. Add the rest of the ingredients

  5. Stir

  6. Cover and allow to cook on a low heat for 20 mins, or until all the vegetables are soft.
