Recipe Ingredients for Mediterranean Vegetables Baked in Golden Batter

6 tbsp chopped Shallots
1 cup, chopped Carrots
1 cup, chopped Peppers, Sweet, Green
1.5 cup, cubes Squash, Winter, Butternut
1 large Egg, Whole
1 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1.25 cup Milk, Reduced Fat, Fluid, 2% Milkfat
2 tsp, leaves Thyme, Dried
0.5 tsp Salt, Table
0.25 tsp Pepper, Black
0.25 cup Olive Oil

Recipe Directions for Mediterranean Vegetables Baked in Golden Batter

  1. Soak tasteless veggies in sall 10 mins before using. Drain well befure adding to hot oil.

  2. Preheat oil in baking sheet to 425F.

  3. Beat the egg, then gradually beat in the flour and a little milk to make a thick paste. Gradually blend in the rest of the milk, add the thyme, salt and pepper to taste.

  4. Cut red onion or shallots and other veggies into large(ish) pieces and toss into hot oil. Bake 20 mins.

  5. TIP it is essential to get the oil really hot before adding the batter, which should sizzle slightly as it goes over the veggies. If it is not hot enough, the batter will not rise well. Bake 30 mins until puffed and golden. If necessary, reduce heat to 375F for 10 mins or until edges are crisp.

  6. Sprinkle with parmesan cheese and herbs, if desired.
