A vegetarian soup good for summer or winter. Filling and fresh.

Recipe Ingredients for Mediterranean Vegetable soup

1 tablespoon olive oil
1 onion, diced
1 carrot, halved lengthwise and sliced
2 stalks celery, sliced
3 cloves garlic, minced
2 cups Vegetable broth
2 cups water
14 1/2 ounces tomatoes, diced-not drained
1 tablespoon basil, fresh-chopped
1/4 teaspoon oregano
1 salt and pepper to taste
15 oz white beans, (canellini) canned-drained and rinsed

Recipe Directions for Mediterranean Vegetable soup

  1. saute onion, carrot and celery.

  2. add remaining ingredents and simmer until evenly warm (about 30 minutes)
