Recipe Ingredients for Mediterranean Vegetable Gratin

1 med eggplant
1 red pepper
1 green pepper
1 zucchini
1 yellow squash
1 large onion
1 can artichoke hearts
2 tsp basil (dry)
1 tsp salt
5 slices light silken tofu (1 pkg)
1/3 cup nutritional yeast
2 tsp of light miso
1/4 cup non dairy milk or creamer
1 tbs tahini
1 tbs fresh lemon juice
1 tbs egg replacer or cornstarch
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
3/10 cup panko bread crumbs
3 tsp margarine (earth balance )

Recipe Directions for Mediterranean Vegetable Gratin

  1. Preheat oven to 400'

  2. Grease a casserole dish

  3. Slice vegetables to .5 thickness. Sauté onion and eggplant for 5 min. Add pepper and continue cooking for 3 minutes add the squashes and cook for an additional 4-5 minutes.

  4. season with basil and salt or your favorite seasonings

  5. Mix the gratin ingredients with a stick blender or mixer until smooth. Season to taste. Toss the gratin with the vegetables in greased casserole.

  6. Top with bread crumbs and dot with butter. Cook for 40 minutes.

  7. Cool for about 15 minutes before serving.
