Recipe Directions for Mediterranean Turkey

Saute ground turkey in olive oil for 3 minutes. Add garlic, onion, celery and eggplant. Continue cooking until vegetables are tender. Add tomatoes, salt, pepper, capers, and olives. Cook 1 minute. Add sugar and vinegar. Mix well. Remove form heat. Serve over cous cous.
