Recipe Ingredients for Mediterranean Tomato, Lentil, and Spinach Soup

1 tbsp (15 mL) olive oil
2 stalks celery, chopped
1 onion, chopped
2 cloves garlic, minced
1 tsp dried basil leaves
1/2 tsp dried oregano
1/2 tsp thyme leaves
1 pinch dried rosemary leaves, crumbled
1 pinch of pepper
3 cups beef stock
28 oz diced tomatoes, including juice
19 oz lentils, drained and rinsed
3 tablespoons lemon Juice, juice of 1/2 lemon
3 cups (750 mL) fresh baby spinach leaves

Recipe Directions for Mediterranean Tomato, Lentil, and Spinach Soup

  1. Heat oil in large saucepan over medium heat.

  2. Add celery, onion and garlic and cook until softened, about 5 minutes.

  3. Stir in seasonings, vegetable stock, tomatoes, lentils and lemon juice.

  4. Bring to a boil, reduce heat and simmer covered for 5 minutes.

  5. Stir in spinach leaves until wilted, about 30 seconds.
