Recipe Ingredients for Mediterranean Tomato, Garlic & Goat Cheese

9 roma tomatoes, large dice
10 garlic cloves
4 oz. goat cheese
1 T. olive oil
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon thyme
1/4 cup chicken broth

Recipe Directions for Mediterranean Tomato, Garlic & Goat Cheese

Dice tomatoes in to about 1 inch pieces. Toss tomatoes and garlic cloves with salt, olive oil, thyme and pepper and place in a 9 x11 pyrex. Break apart and sprinkle the goat's cheese evenly over the top. Add broth and place in an oven preheated to 400 for 40 minutes.
