Tilapia fillets with sweet onions and tomatoes. Add Olives for a kick!

Recipe Ingredients for Mediterranean Tilapia Filets

8 oz. tilapia Fillet
1 medium Yellow Onion
2 T. Extra Virgin Olive Oil
1 t. Salt
1 t. Pepper
1 t. Oregano
2 Roma Tomatoes
2 T. Lemon Juice
2 cloves garlic

Recipe Directions for Mediterranean Tilapia Filets

Saute onions in 2 T olive oil. Heat oven to 375 degrees. Once onions are browned and caramelized, remove them from the heat. Place fillets on top of onions. Squeeze juice of lemons over fish, sprinkle with salt, pepper, and oregano. Fan tomato slices over top of fish fillets. Bake at 375 degrees for 12 to 15 minutes, or until fish is cooked through and flakes easily.
