Recipe Ingredients for Mediterranean Stuffed Pork Loin

1 7/20 lbs pork tenderloin
1 red pepper
2 cloves garlic
6 oz spinach
1/8 cup pine nuts
1 tsp olive oil
1 tablespoon cilantro

Recipe Directions for Mediterranean Stuffed Pork Loin

  1. heat chopped pepper, garlic, olive oil on medium heat

  2. after a few minutes, add spinach

  3. butterfly cut the pork loin, tenderize and then stuff

  4. heat stuffed loin at 375 Farenheit until thoroughly cooked (based on weight)
