Recipe Ingredients for Mediterranean Spinach and Pasta

1/2 pound pasta
1/4 cup Water
1/4 cup olive oil
1 cup onion, thinly sliced
2 garlic cloves, thinly sliced
1 tsp crushed red pepper flakes
8 cups spinach
16 ounce kidney beans, undrained
1/2 cup grape tomatoes, cut in half
1 oz .5 cup vegan cheese
1 tbsp fresh parsley, chopped, or 1 tsp dried parsley
1 salt and pepper to taste

Recipe Directions for Mediterranean Spinach and Pasta

  1. Cook pasta according to box directions (reserving 1/4 cup water).

  2. Heat oil in large sautee pan. Add onions and garlic. When translucent, add red pepper flakes, spinach, kidney beans and pasta water.

  3. Simmer over medium heat until spinach is tender. Add pasta, tomatoes, cheese and parsley and combine. Salt and pepper to taste. Serve warm.
