Recipe Ingredients for Mediterranean Spinach & Couscous Salad

1 1/2 cups frozen spinach, chopped
1 cup whole wheat couscous, dry
4 tablespoons almonds, toasted
1 teaspoon rosemary
1 teaspoon oregano
3 tablespoons feta cheese, crumbled
1/2 tomato, chopped
1/3 cup button mushrooms, sliced
2 teaspoons lemon juice
1 teaspoon salt
1/3 teaspoon minced garlic
2 tablespoons olive oil

Recipe Directions for Mediterranean Spinach & Couscous Salad

  1. Boil 1 cup water and 1 T oil in small pot.

  2. Add 1 cup couscous and oregano. Cover, let sit 10 min.

  3. Meanwhile, saute 1 T olive oil and garlic in pan.

  4. Add spinach, salt, and pepper. Saute 3-4 minutes.

  5. Add tomatoes and mushrooms, saute 4 more minutes.

  6. Add lemon juice.

  7. Toast almonds and rosemary til lightly brown.

  8. Fluff couscous with a fork.

  9. Mix couscous, spinach mixture, almonds, and feta in a bowl.
