Recipe Ingredients for mediterranean spaghetti squash

4 cups spaghetti squash, cooked
2 tbsp olive oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cup tomato, chopped
3/4 cup crumbled feta
1/4 cup fresh basil, chopped
1/4 cup kalamata olives, sliced

Recipe Directions for mediterranean spaghetti squash

  1. slice squash lengthwise, remove seeds and place cut side down in a baking dish and bake at 350 for approximatey 30 minutes or until fork tender

  2. allow to cool and scoop out flesh into a mixing bowl with a spoon

  3. saute onion and garlic in olive oil

  4. mix, feta onion, garlic, tomato, basil and olives with the cooked squash

  5. may add salt and pepper to taste

  6. option: add chopped marinated artichokes
