Recipe Ingredients for Mediterranean salsa

2 tbsp olive oil
2 tbsp vinegar
1 garlic clove
1 tsp oregano
1 tsp rosemary
1 tsp sugar
1/4 tsp black pepper
15 kalamata olives
1/2 c cucumber
1/4 c onion
1 c tomatoes
0.33 c feta cheese

Recipe Directions for Mediterranean salsa

  1. Combine oil, vinegar, garlic, basil, rosemary, sugar and pepper in medium bowl.

  2. Add olives, cucumber and onion; toss to coat.

  3. Cover and refrigerate until ready to serve.

  4. Just before serving, stir in tomatoes and crumbled feta.

  5. Makes about 2 cups.
