Sometimes your own creation comes out better than a searched recipe! I had salmon to make and wanted to do a pasta with it. Just combined whatever veggies I had on hand and it turned out to be AWESOME! (and quick too!) The feta cheese I found is from Trader Joes, comes marinated in EVOO and totally made this dish. This recipe also falls delightfully into the Flat Belly Diet (MUFA: olives, oil)

Recipe Ingredients for Mediterranean Salmon & Pasta

4 serving Garden Delight Rotini (Ronzoni)
6 oz Wild Sockeye Salmon Fillet
1/2 medium red bell pepper, diced
1/2 small yellow bell pepper, diced
1 small zucchini, diced
3 scallions, diced
1 medium roma tomato, coursely chopped
1 clove garlic, minced
1/4 cup kalamata olives, coursely chopped
2 tablespoons extra virgin olive oil
1 tablespoon italian herb seasoning blend, divided
1 tablespoon lime juice
4 oz Fat Free Herb Feta

Recipe Directions for Mediterranean Salmon & Pasta

  1. Preheat oven to 400 degrees. Line a baking dish or cookie sheet with foil, shiny side up (makes cleaning up easier).

  2. Place salmon, skin side down on foil and drizzle with lime juice and sprinkle half the herb seasoning over. Bake about 30 minutes.

  3. Meanwhile, bring a pot of water to boil and cook pasta to package directions. Drain, return to pot, cover to keep warm and set aside.

  4. While pasta is cooking, heat oil in a skillet over medium-high heat. Add garlic and saute 30 seconds or until fragrant.

  5. Add zucchini and remaining herb seasoning and saute about 4 minutes or until just beginning to soften.

  6. Add bell peppers and saute until peppers begin to soften, about 3-4 minutes.

  7. Add tomato and saute another minute.

  8. Add scallions and saute until wilted. Remove from heat.

  9. Add contents of skillet including all juices to pasta. Add olives and feta and toss all to combine.

  10. Serve salmon portions over pasta mixture with a glass of wine!
