Based on Mediterranean Chicken and Rice Skillet, without the chicken. From 3 Books in 1 (One-Dish, Slow Cooker, Casseroles). May use 2 tsp dried basil and 2 tsp dried parsley in lieu of the fresh herbs.

Recipe Ingredients for Mediterranean Rice Skillet

2 tbsp olive oil
1 cup green onions, sliced
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
3 cloves garlic, minced
1 tsp dried oregano
14 ounce diced tomatoes with green chiles
14 ounce chicken broth
1/4 tsp black pepper
1 cup long grain white rice
1/2 cup black olives
1/2 cup grated Parmesan cheese
1/3 cup frozen peas, thawed
2 tbsp basil, chopped
2 tbsp parsley, chopped

Recipe Directions for Mediterranean Rice Skillet

  1. Heat oil in large skillet over medium-high heat. Add chicken; cook until no longer pink. Add green onions, bell peppers, garlic and oregano; stir to coat.

  2. Add tomotoes, chicken broth and black pepper; bring to a boil. Stir in rice. Cover, reduce heat and cook 20 minutes or until most of liquid is absorbed. Stir in olives, cheese, peas, basil and parsley.
