Greek Rice side for Lemon Chicken or Shrimp

Recipe Ingredients for Mediterranean Rice

8 oz orzo
1 red pepper
1 yellow pepper
1 red onion
1 cup grape tomatoes
1/2 cup kalamata olives
1/2 cup flat leaf parsley
6 oz feta cheese
2 tablespoons olive oil
2 cloves garlic

Recipe Directions for Mediterranean Rice

  1. Boil orzo according to package directions

  2. chop peppers and onion, saute in olive oil till tender 5 min.

  3. add garlic stir for a minute

  4. add halved grape tomatoes and kalamata olives

  5. stir a few more minutes

  6. Drain orzo

  7. Toss with vegetable mixture in a serving bowl with flat leaf parsley and feta cheese.

  8. serve immediately.
