Recipe Ingredients for Mediterranean Quinoa Salad

4 serving Organic Tricolor Quinoa Trader Joe's
2 serving Low Sodium Vegetable Broth Trader Joe's
0.25 cup, chopped Onions
0.5 cup, chopped or sliced Tomatoes, Red, Ripe
0.5 cup leaves, whole Basil, Fresh

Recipe Directions for Mediterranean Quinoa Salad

Rinse quinoa in cold water. Add to a medium sauce pan with 2 cups broth. Bring to a boil, then reduce heat and simmer until the liquid is gone, about 10-15 minutes. Thinly slice the onion. Seed and dice the tomato. Shred the basil leaves. Toss with the quinoa while still warm. Optional: drizzle with olive oil before serving.
