Healthy Mediterranean Quinoa Salad

Recipe Ingredients for Mediterranean Quinoa Salad

1 cup dry Quinoa
1 large (8-1/4" long) Cucumber, Peeled
1 1/2 cup Organic Cherry Tomatoes
1/4 cup Olive Oil
1/2 tsp Sea Salt
4 oz Juice
1 medium raw Onion Red
12 tbsp Parsley, Dried
4 oz (Greek Isle) Fat Free Feta Cheese
4 serving Artichoke Hearts (Kirkland)
4 serving (SunPix) Hearts of Palm
15 oz Peas Chick

Recipe Directions for Mediterranean Quinoa Salad

Boil 1 c Quinoa in 2 c of water for approx. 15-20 minutes - then cool when done. Chop Veggies, mix remaining ingredients into the cooled quinoa. Enjoy!
