Fresh tasting quinoa. Good hot or cold! For easy doubling: quinoa is preparred with a 2-1 ratio. In other words, 2 parts liquid, 1 part quinoa.

Recipe Ingredients for Mediterranean Quinoa

1 cup Fat Free Vegetable Broth
1/2 cup quinoa
2 artichokes
2 tbsp fresh parsley
2 tbsp lemon zest
1/8 cup parmesan cheese
2 tbsp olive oil

Recipe Directions for Mediterranean Quinoa

  1. Bring vegetable broth to boil, add quinoa. Cook over low heat for 12 minutes. Remove from heat and let sit for 10 minutes, fluff with fork.

  2. Add chopped artichokes (1/2 cup of canned or jarred works well), chopped parsley, lemon zest, parmesean cheese and olive oil.

  3. Stir to combine.
