Recipe Ingredients for mediterranean penne bake

3 tbs olive oil
4 tbs bread crumbs
2 bell peppers
1/2 cup low fat mozzarella
1/2 lb penne
4 cups spinach
3 tbs parmesan
1/2 cup mushrooms

Recipe Directions for mediterranean penne bake

  1. 1. Boil Penne

  2. 2. Chop red peppers and mushrooms and sauté in olive oil

  3. 3. Add spinach and spices (oregano, garlic, whatever)

  4. 4. Combine pasta and vegetables

  5. 5. Mix in mozzarella

  6. 6. Spray dish with pam, coat entire pan in breadcrumbs

  7. 7. Add mixture to dish

  8. 8. Sprinkle a lightly scrambled egg over top

  9. 9. Sprinkle parmesan and breadcrumb mix overtop

  10. 10. Bake at 350 for 40 minutes
