Recipe Ingredients for Mediterranean Pasta Salad

4 oz pasta, (corkscrew) -163cal per serving
1/4 medium onion, minced
3/4 cup cherry tomatoes, quartered, (gently squeeze to remove seeds)
3 garlic cloves, pressed
1 1/2 tbs chopped fresh basil
1/2 tbs chopped fresh tarragon
1 1/2 tbs fresh lemon juice
1 tbs balsamic vinegar
2 tsp extra virgin olive oil
1 salt, cracked black pepper to taste
1 1/2 oz goat cheese (optional- adds 96cals per serving)

Recipe Directions for Mediterranean Pasta Salad

  1. Cook pasta according to instructions on package.

  2. While pasta is cooking prepare rest of the ingredients. Place everything in a bowl and set aside.

  3. Drain and rinse in cold water through colander when done. Make sure it drains well so it doesn't dilute flavor.

  4. Toss with rest of ingredients, and season with salt and pepper.
