This is a great and tasty pasta salad. The feta cheese can be removed if you're looking for a healthier version but it adds a lot of taste and texture to the recipe. Serves 4.

Recipe Ingredients for Mediterranean Pasta Salad

2 cups of fusilli
1/2 cup of mayonnaise
1 tbsp lemon juice
1 cucumber
1 onion
1/4 cup of feta cheese
5 g of parmegiano cheese, shredded
1/2 tsp sundried tomatoes, sliced
1/2 tsp basil
1/2 tsp oregano
1/2 tsp salt

Recipe Directions for Mediterranean Pasta Salad

  1. In boiling water, cook the fusilli until they are al dente.

  2. Cut the cucumber, onion and red pepper.

  3. Mix the mayonnaise, lemon juice and spices (parmegiano cheese, sundried tomatoes, basil, oregano and salt).

  4. When the fusillis aren't hot anymore, mix them with the vegetables and the sauce.

  5. Add the crumbled feta and serve.
