Great pasta dish with a mediterranean flare

Recipe Ingredients for Mediterranean Pasta

1 cup Macaroni, penne
1 cup Broccoli
1/2 cup Tomato, sundried
1/2 cup Eggplant, Roasted
1/2 cup Peppers, red
3 artichoke hearts, chopped
2 tbl Kalamata Olives
1 tbl Basil, fresh
1 tsp Garlic, minced
2 tbl Pine Nuts
2 tbl Olive Oil

Recipe Directions for Mediterranean Pasta

  1. Boil pasta according to directions, drain well

  2. Saute vegetables in olive oil, add salt and pepper to taste

  3. Combine pasta and vegetables in large bowl and serve

  4. Great served hot or cold
