Recipe Ingredients for Mediterranean Pasta w/Kidney Beans

8 oz pasta (whole wheat)
1/4 cup water
2 tbls olive oil
1 cup onion
2 cloves garlic
1 tsp crushed red pepper flakes
6 oz spinach
16 oz canned dark red kidney beans, drained and rinced
1/2 cup cherry tomatoes
1 tbls parmesan cheese
1 tbls parsley

Recipe Directions for Mediterranean Pasta w/Kidney Beans

Cook pasta according to package directions (reserving 1/4 cup water). Heat oil in large saute pan. Add onion and garlic. When translucent, add red pepper flakes, spinach, kidney beans and reserved pasta water. Simmer over medium heat until spinach is tender. Add pasta, tomatoes and parsley and combine. Season with salt and pepper, if desired. Sprinkle with cheese. Serve warm.
