Recipe Ingredients for mediterranean orzo

25 olives Kalamata Olives
1 medium raw Bell Pepper Green
2 medium (4-1/8" long) Onions, Spring Or Scallions
3 tablespoon Italian Parsley
10 pieces Sun Dried Tomatoes
2 tbsp Vinegar red wine
1 dash Salt, Table
1 dash Pepper, Black
5 oz Orzo Dry
1 serving Organic Olive Oil Cooking Spray

Recipe Directions for mediterranean orzo

  1. pour hot water over sun dried tomatoes and let sit for 15 minutes then drain and chop

  2. boil orzo, drain and set aside

  3. chop olives, onion bell pepper and parsley

  4. spray non stick pan with oil and heat

  5. add bell peppers and onion

  6. cook until slightly softened

  7. add all other ingredients and cook until heated through
