Serve this with Mediterranean food, especially salads, creamy goat cheese, and soft mozzarella. Makes good toast.

Recipe Ingredients for Mediterranean Olive Bread

1 c all-purpose flour
3/4 c whole-wheat flour
2 t baking powder
3/4 t dried rosemary
1/2 t salt
2 large eggs
1 c milk
1/4 c olive oil
1/3 c finely chopped walnuts
1/3 c chopped pitted olives

Recipe Directions for Mediterranean Olive Bread

  1. Position rack in the lower third of the oven. Preheat oven to 350 degrees F. Grease an 8-1/2 X 4-1/2 - inch (6 cup) loaf pan.

  2. Whisk together thoroughly the all-purpose flour, whole-wheat flour, baking powder, dried rosemary, and salt.

  3. Whisk together in another large bowl the eggs, milk, and olive oil.

  4. Add the flour mixture and fold until about three-quarters of the dry ingredients are moistened.

  5. Add the walnuts and olives. Fold just until the the pieces are distributed and the dry ingredients are moistened; the batter will be stiff. Scrape the batter into the pan and spread evenly. Bake until a toothpick inserted into the center comes out clean, 40 - 45 minutes. Let cool in the pan on a rack fo 5 - 10 minutes before unmolding to cool completely on the rack.
