Recipe Ingredients for Mediterranean Lentil Salad

19 oz. lentils
3 oz. lime juice
2 tsp. Dijon mustard
1 tsp. dill
2 tbsp. olive oil
1 red bell pepper, chopped into 1/4 pieces
1/2 cup red onion, finely chopped
1/2 tsp. crushed red pepper
1/2 cup crumbled feta cheese
1/2 tsp. black pepper

Recipe Directions for Mediterranean Lentil Salad

  1. Drain the lentils and pour into a medium-sized mixing bowl.

  2. Mix lime juice, dill, mustard, and half the olive oil into the lentils.

  3. Saute the pepper and onion in the remaining oil for about 5 minutes, or until soft, but not browned.

  4. Allow the peppers and onions to cool, then add into the lentils, with the red and black pepper.

  5. Mix in the feta cheese.

  6. Chill for at least 15 minutes, then serve.
