1 cup Organics Green Lentils Dry
1 cup, chopped Carrots
1 cup, chopped Onions
2 clove Garlic
1 grams Bay Leaf
0.5 tsp, leaves Thyme, Dried
0.13 cup Lemon Juice
0.5 cup, diced Celery
0.25 cup Parsley
1 tsp Salt, Table
0.25 tsp Pepper, Black
0.25 cup Olive Oil

Recipe Directions for Mediterranean Lentil Salad (allrecipes.com)

  1. In a saucepan combine dried brown lentils, diced carrots, diced red onion, minced garlic, whole bay leaf, and thyme. Add enough water to cover by 1 inch. Bring to boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender but not mushy.

  2. Drain lentils and vegetables and remove bay leaf. Add olive oil, lemon juice, diced celery, chopped parsley, salt and pepper. Toss to mix and serve at room temperature.
