Not really Mediterranean at all, just...throwing things together! Meant for taking with you to lunch at work the next day.

Recipe Ingredients for Mediterranean-Ish Salad

1/2 cucumber, sliced
2 T red wine vinegar
1 T olive oil
1/2 tsp pepper
1/4 cup sesame seeds
8 cherry tomatoes, quartered
2 hard boiled eggs, chopped
4 cups romaine lettuce
1/2 cup brown rice
1/2 cup corn
1/2 cup broccoli florets

Recipe Directions for Mediterranean-Ish Salad

  1. Might be a good idea to have ingredients separated ahead of time, like in little baggies or something, due to the marinating process.

  2. The night before consuming, layer cucumber slices in the bottom of a container with a lid. Pour over the vinegar, oil, pepper, and sesame seeds. Layer the remaining ingredients in order as above (i.e., broccoli and corn right against the dressing and cucumber slices, tomatoes and eggs on top). Leave it in the fridge overnight.

  3. Shake well just before serving!
